Our Winter Spelt is a mix of Oberkulmer, Zollernkorn, and Frankenkorn all of which are true spelts. When harvested Spelt still has a hull tightly attached making it inedible without further processing. We remove the hulls and clean the spelt grain to remove any chaff and dust prior to bagging for the end user.
