“Choices F1” is a food grade organic corn that we sourced from the Hudson Valley. It’s a lovely yellow-red corn that can be used to make cornmeal, masa, etc. Please note that the product has a pronounced red hue when it’s ground and will produce an earthy brown-colored masa when nixtamalized.
It was bred by Dr. Keith Williams working with chefs and bakers to bring together the positive aspects of a high-yielding hybrid with the culinary advantages of traditional flint maize, and is 50% yellow dent and 50% red flint. Dent parentage improves milling and fermentation quality combined with flint parentage to improve protein and flavor, with plants producing uniform red ears that grow from pure yellow seed.
