Freekeh is traditionally a preparation of Durum wheat in which the wheat is harvested when the grain is still green and the straw and chaff burned away giving it a smokey nutty flavor. A similar preparation, called Grünkern, is made with spelt and is traditionally found in Northern European cultures. We harvest spelt green, roast the green, hulled grain in an open fire at 600F-700F for a short period of time and then finish the drying, dehulling, and cleaning process.
